Yes it’s that time again boys and girls stampede is here!!
There are going to be some phenomenal parties happening in Calgary for 2016, and with that in mind you may need a phenomenal catering company who knows Calgary and knows the landscape.
At Asplendidaffair we have been a staple of the Calgary landscape for over 20 years, and in that time we have done hundreds a stampede parties.
The challenge for most companies hiring a caterer who knows all about how to throw a great stampede party is very few of them in Calgary have the experience we do.
And we are always there to help our clients and Calgarian’s with great information tips and tricks, with that in mind here are some new ones:

It is great and easy to have your family and friends over for a Stampede get together. Food and decor can be unpretentious  and fun. The only thing, during hot summer days, is of course food safety. Here is a list what, and what NOT to do.

If it is Burgers, Smokies, Hot Dogs,  or Brats, you want it safe and not dried out.
1 Burgers are to be kept frozen or in the refrigerator, until the last moment before you grill them.

2 Have a metal container about  2 – 3 litre  capacity, and fill half with water
place on a corner on your BBQ. You want to warm up your sausages, or thry will take to long to get hot inside. The other problem is dry sausages.

3 PLEASE NEVER LEAVE SALADS ETC UNDER DIRECT SUNLIGHT

4 NEVER SERVE SALADS WITH HOME MADE MAYONNAISE

5 ALWAYS USE STORE BOUGHT MAYONNAISE LIKE HELLMANS ETC AS THE EGGS ARE PASTEURIZED SO NO SALMONELLA.

6 Salads have to be kept cold, either by limit the time outside, smaller bowls and even better have a smaller bowl in a larger bowl with ice cubes.

7 For very little effort, make your own baked beans. It is very easy.
Soak beans like kidney, black eye, navy beans, chick peas etc. in water over night is best, in separate pots. A lot of water as the beans will absorb it.
Boil all the beans separately until tender. If you have to much, no problem, just freeze in a zip-loc bag. In an oven proof container place beans, add tomato sauce, fancy molasses, seasoning etc and bake for about 2 hours.
Leftovers can be frozen for your next BBQ.
Oh, buttered corn, kernel or on the cob is great as most women prefer it over the beans.

If you have not enough room in the fridge for the beer, get a cooler and some ice. Food safety and quality trumps beer every time.

These tricks become 2nd nature after a while.
